The BEST & Creamiest Macaroni & Cheese and it’s Gluten Free Too
This is a Great Base for you to make any kind of Mac & Cheese you could ever want. My favorite way to make this Gluten Free with Brown Rice Pasta & My Special Gluten Free All Purpose Flour Mix.
Whether you use regular pasta, white flour, gluten free, any cheese combos you want, the measurements are all still the same.
Use this recipe to add Prosciutto, Lobster, Ham, Veggies, Bacon, Chives, etc. as your Mac & Cheese base.
I use Organic and GMO Free items whenever possible. I also use Block Cheese whenever possible as there are additives and fillers with store bought shredded.

- 12 or 16oz Gluten Free Brown Rice Pasta
- ½ Cup Butter
- ½ Cup Gluten Free Flour
- 2 Tsp Garlic Powder
- 1 Tsp Pink Salt
- 1 Tsp Pepper
- 2 Tsp Paprika
- ⅛ Tsp Cayenne (optional)
- 1 TBL Ground Mustard
- ½ Cup Cultured Sour Cream *Optional
- 3 TBL Cream Cheese *Optional
- 2 ½ Cups Milk or Half & Half of any kind (I use Almond Milk)
- 3 Cups Grated Cheddar Cheese
Cook Pasta according to Directions BUT… Make them al dente if you are going to cook in the Oven. You could eat it right after mixing the pasta with the sauce but it does taste better baked. If you don’t bake it, cook the pasta fully.
And, For the Cheese, shred it before you start cooking. I also put all my spices in my Flour one small bowl in advance.
Preheat Oven to 375 Degrees. I don’t grease my glass 9 x 13 Casserole dish because I find that it’s overkill and my family likes scraping the dish.
When you start boiling the pasta water, use another burner on High, to start making your sauce. When Pasta is done, drain and rinse with cold water while you finish making the sauce and keep in strainer.
In a large pot, heat your butter on Medium High and whisk in your Flour & Spices when melted. Whisk until almost ‘dry’. It will look clumpy and will be spread around the pan. Awesome!
Now, pour in ½ cup of Milk, Whisk until fully incorporated and sauce is thickening. Keep repeating this process until Milk is all gone.
It’s time to add in the Sour Cream & Cream Cheese* if you want to have really creamy M&C. Whisk and now… Stick your finger in the sauce to see how the ‘spice’ flavor is. You want to do this and adjust it before you put your cheese in. Once you are satisfied, take off the heat and add in your cheese and Mix until melted. There is nothing worse than wasting cheese. Butter, Flour and Milk can more easily be started over.
Take your Cooled pasta and toss it all into your Sauce. Mix lightly being sure to coat all the noodles. Pour pan contents into your buttered casserole dish and pop in the oven. Cook for 15-25 Minutes depending on your desired browning. Some people like to put crunchy toppings like crushed Ritz or Bread crumbs on their Mac & Cheese but this dish doesn’t need it.
