These are AWESOME. I love apple pie but I love the Crust just as much, especially MY Pie Crust Recipe. There always seems to be more filling than crust so I decided to make itty bitty baked apple pie empanadas with plenty of delicious crust and just the right amount of filling.
TA DA! Boom! I just cranked out 20 Apple Pie Empanadas and I had 6 Dough Balls left over so I made 6 Peanut Butter Hazelnut Chocolate Marshmallow empanadas. You can hold them in your hand or put one in each hand…that’s even better.
These suckers take a little time but they are worth it.
Baked Apple Pie Empanadas Recipe
Use my Pie Crust Recipe and make the dough and roll into Small, (Smaller than Golf Balls) balls and then refrigerate for at least 1hr before you are ready to roll out the dough for your Empanadas.
- 5 Medium Apples (chopped very tiny)
- 2 TBL Cinnamon
- 1/2 Cup Butter
- 1/4 Cup flour
- 1 Cup Water
- 1/2 Tsp Ground Cloves
- 1/2 Cup Brown or Turbinado Sugar
- 1/2 Cup Cane or Light Sugar
Preheat your oven to 375 degrees and line 2 cookie pans lined with Parchment Paper.
Mix Cinnamon well with your Apples in a large bowl and set aside.
In a small sauce pan heat butter on Medium Heat. Once melted add in your Flour and Whisk until it is mixed well and forms a thick paste. Add in your water and whisk well, then the remaining ingredients. Keep whisking until fully incorporated.
Pour mixture over your Apples and mix well making sure to coat evenly.
Take your Dough Balls out of the Refrigerator.
Using a Rolling Pin and Mat, roll out one ball at a time into a flat disc, like below
Add a Spoonful of apple pie mixture onto your dough and then fold in half.
First press and then pinch to close your dough
Do this repeatedly until either all your filling is gone or your dough is all used up. I like to lightly bush some of the sugar mixture on the top of each Apple Pie Empanada but you can also use an Egg White Wash and sprinkle on some cane or brown sugar for fun.
You can make about 2 dozen of these but I doubled my Dough Recipe and made 52 using this Same Apple Filling amount. Again, I like more crust and less filling but you can stuff your Empanadas.
Another option is to use Muffin Tins and form your dough into mini-pies.
NEXT… These Apple Pie Empanadas take about 1hr to cook. When they look delicious enough to devour, they are done!
Take a fork and make some little holes in the top of each empanada for steam.
