I love cheese. I love broccoli. So, when you put them together you can get a rich and satisfying and very low carb Broccoli Cheddar Soup.
I make Broccoli Cheddar Soup a few different ways. Normally I make a Roux with Butter and my Gluten Free Flour which tastes just as good as using normal flour. I also use almond milk instead of heavy cream.
But, when making a soup that is Keto Friendly then I omit the Flour all together and just add a very small amount of Xantham Gum for a bit of thickness.
Sometimes I use other cheeses like smoked gouda which is amazing or just whatever cheeses I have in the fridge.
One of the things you need to consider is how thick you want your soup and who is going to eat it. If you want your kids to love it stick with Cheddar and Cream Cheese and that’s it for the cheeses. Anything else might ‘smell’ stinky to them.
This recipe is large and usually is meant for 2nds and leftovers so if you want to make less then divide the recipe in 1/2.

Broccoli Cheddar Soup Recipe
- 1/2 Cup Butter
- 1 Small Onion Diced
- 1 TBL Xantham Gum
- 1/2 Tsp Salt
- 1/2 Tsp Pepper
- 1/2 Tsp Garlic Powder
- 1/4 Tsp Cayenne Pepper
- 4 Cups Chicken Broth
- 2-3 Cups of Chopped Broccoli
- 1 1/2 cups heavy cream
- 3 Cups shredded Sharp cheddar cheese
- *Cream Cheese Package Optional (I was out of it tonight but it makes your soup extra rich and creamy
In a large pot put in your Butter, Onions, Xantham and Spices. Cook on Medium until onions are translucent.
Add in the broccoli and Broth and turn on High. Cook for 5-7 Minutes and turn down the temperature to Low and add in the cream.
Use an immersion blender and lightly blend up the broccoli. We like chunks so just do this a bit. Also, if you completely blend up the broccoli your soup will turn Green. It’s not nearly as appetizing when it’s green.
Add in your cheese and stir frequently. When fully blended, simmer on the lowest setting and stir frequently for about 10 minutes.
Get yourself a bowl of soup, sprinkle a little extra cheese and some pepper in your bowl and enjoy.
