Pesto Pasta dishes are almost always a hit with kids. When you want to make something filling, light, satisfying and something that the entire family will eat – and like – make this quick and easy meal.
Chicken and Broccoli Pesto Pasta Recipe
- 4 Chicken Breasts (cut into bite sized cubes
- 3 TBL Olive Oil
- 1 Package pasta of your choice
- 1 Cup Pesto Sauce
- 2-3 Cups Broccoli Florets
- 1 TBL Crushed Garlic
- 1/2 Tsp Salt
- 2 Tsp Poultry Seasoning (or Old Bay or other favorite chicken seasoning)
In a Large pot prepare your Pasta to the provided directions. Simultaneously, in a large pan add your Olive Oil and Garlic along with Seasoning and Salt. Mix in Chicken and cook on Medium heat until chicken is fully cooked but not over cooked or crispy – unless you want it crispy of course.
Steam your Broccoli. You can do this in a pan with 1 inch of water or in the microwave with water. You choose. I Prefer using a pot on the stove and put on a lid on it to steam. You want it cooked fully but not limp.
Drain your Pasta in a strainer. Add your Pesto Sauce to the pot and mix in your drained pasta. There are a TON of Pesto Sauces out there. I’ve used a lot of different pesto sauces (vegan, vegetarian, homemade, a mix, premade, etc) You can easily find them at the store. Costco has a tasty one our daughter is in love with and is the one I used in today’s meal.
I use tongs to toss the pasta in the sauce. Then, once coated, add your cooked chicken and broccoli. Mix thoroughly and serve immediately.
You can add some Parmesan cheese, parsley or even some chopped up basil as garnish but this dish doesn’t need it. It’s simple and delicious.
