I use to hate Salmon when I was a kid. Even as an adult it was only in the past few years I started liking Salmon.
My mom use to chase me around the house with full fish their heads on them to torture me. Might possibly explain why I am the way I am Mom – Thanks!
While this isn’t the reason I didn’t care for Salmon it didn’t help. I think the flavor, to me, was more fishy than white fish like cod because I live fish and chips.
Over the years I’ve made a lot of Salmon for my family, because they love it. I have a few favorite recipes I’ve come up with over the years but this one is a favorite of all of ours.
We only eat Wild caught Fish. Period.
Easy Salmon with Lemon Butter
- 2 Salmon Fillets (fresh or thawed)
- 1/4 Cup melted Butter (I use Earth Balance for Shawn)
- 1/4 Cup Lemon Juice
- 1 TBL Dill Weed
- 1 TBL Garlic Powder
- Pinch of Salt and Pepper
Preheat oven to 350 degrees.
In a 9 x 13 casserole dish place your salmon fillets, skin side down, in the dish
In a small bowl mix melted butter and lemon Juice. Pour evenly over your fish. It should be swimming a bit so you have some sauce left over to pour on your veggies and rice – like I did for dinner tonight.
Sprinkle your dill and garlic powder over the fish along with the salt and pepper.
Now, cover with foil or parchment paper and place in oven on middle rack for 25 Minutes.
It should come out moist and fully cooked but not dry at all.
I cooked some organic Basmati Rice along with an organic Vegetable Medly.
I drizzled some of the lemon butter sauce over my rice and steamed veggies. SO GOOD and Fresh tasting.
This Salmon recipe is a family favorite and they ate everything!
You can also add some capers to this if you like that extra saltiness or put some lemon slices on top for extra flavor and display.
