Huevos Rancheros are super easy to make. There are a LOT of variations and ways to make it and with accompaniments such as tortillas and even toast.
When I want to watch what I am stuffing in my face that is affecting my muffin top – I go back to simple foods packed with flavor and very low sugar content and processed carbs.
Breakfast is one of those meals where it’s easy to add in some potatoes, toast and things like Jam & Sauces that add a ton of calories and things that will turn to sugar in your system.
So, today, my muffin top is begging me to start watching what I eat and to make good choices for a few weeks. That means adding veggies to everything I make and to focus more on quality that feels like quantity.
I made these without any ham or meats added in but you do you okay. If you want some then add some. Same with the veggies. Add more of what you love.
I love eating this with Corn Tortillas but the corn turns to sugar in our system so I’m abstaining today. And really, if you make this you will be satisfied.
Huevos Rancheros Recipe
- 2 Eggs – scrambled
- 1/4 Cup chopped Red Onions
- 1/4 Cup chopped Red or Yellow Pepper
- 1/4 Cup Fresh Salsa
- 1/2 Avocado cut into small chunks
- 1/2 TBL Olive Oil
- Cilantro for garnish
- Pinch of sea salt and pepper
Turn stove top onto Medium heat and add olive oil to your small sauce pan. Add in Onions and Peppers and cook for 2-4 Minutes.
Add salt and pepper to Scrambled Eggs and add to pan and stir regularly.
When almost done, add in your salsa and mix well cooking for an additional 1-2 minutes.
When done, put in a bowl and add in your Avocado and Cilantro on top and Enjoy!
I also put together a bowl of Fresh Red and Green Grapes and some Blueberries to snack on after. This really helps me to fill myself up with healthy foods that help fuel my body instead of just give into my cravings.
