It’s such a beautiful day out today – 80 degrees in April – in Seattle!  To me that means – Macaroni Pasta Salad time!

I’ve eaten and made a LOT of pasta salads in my 42yrs.  A LOT!  My very favorite is one that has mayonnaise, olives, sharp cheddar cheese, red onions and celery.  These are MUST’s to me.

Today I made this with a Vegenaise since I was all out of my regular Mayo. Shawn prefers vegenaise and I had gotten use to the flavor when we were Vegan in 2014.  Yes, we were Vegan and It was awesome and we felt great – except we really missed cheese and eggs, fish and chicken.

Anywho, you can use whatever mayo you want in this recipe.  I also use Apple Cider Vinegar instead of Red Wine Vinegar as it’s just better for you.  I do love the flavor of RWV though so use that if that’s your preference.  AND, to keep it Vegan, use Xylitol or Stevia in place of the Raw Sugar and exclude the Cheddar but add in Cashew Cheese or other nut cheeses in place.

Honestly, If I just ate the Pasta Salad with just the Mayo mixture on it I’d be fine.  So, have fun, get creative, and make a Pasta Salad that has your favorite things like Pickles, Green Peppers, Salad Shrimp, or more exotic ingredients!

Macaroni Pasta Salad

INGREDIENTS

  • 1 Package Elbow Macaroni (prepare in advance, drain and cool)
  • 8 oz block Sharp Cheddar Cheese (Small cubes)
  • 2 large Cans Black Olives (sliced)
  • 8 Celery Stalks (thinly Sliced)
  • 3/4 of 1 Medium Red Onion (Diced)
  • 1 Red Pepper (Chopped)
  • 1 Cup Mayonnaise
  • 1/4 Cup Apple Cider Vinegar
  • 2 TBL Raw Sugar
  • 2 TBL Parsley

DIRECTIONS

In a Large bowl combine the Cheese, Olives, Celery, Onion and Pepper.  Set AsideMacaroni Pasta Salad Recipe

In a small bowl, mix your Mayo, ACV and Sugar together and then taste and tweak to your personal desired flavor.

Take your Pasta and pour 1/2 the Mayo mixture over it and mix well until incorporated.   Add Parsley and stir well again until incorporated.

Now, Add your pasta to your large bowl with your Cheese and Veggies and mix thoroughly.  Add the remaining mayo mixture and mix well.  Macaroni Pasta Salad Recipe

Cover and refrigerate for at least 1-2 hrs before serving.
