I don’t know about you but whipped butter and sugar get me every single time. It’s orgasmic really. I love that combo long time. YUM. And, Yes. Shawn and I both made sure we licked the Whip whisk clean!
White Chocolate Macadamia Nut Butter Cookies recipe
For this recipe, I have made it several different ways to accommodate our various diets over the years. So, tweak it. Just before you add in those expensive macadamia (or any nut for that matter) and chocolate chips, taste the dough. make sure you have the flavor you want.
This recipe has it all. Eggs. A LOT of Butter. Nuts. Chocolate.
- 1 Cup Softened Butter (I use Kerrygold)
- 1 Cup Brown Sugar (coconut sugar works great too)
- 1/2 Cup Raw Sugar
- 1/2 Tsp Vanilla Extract
- 1/4 Tsp Almond Extract
- 2 Large Eggs
- 1 Tsp Baking Soda
- 1/2 Tsp Salt
- 2 1/2 Cups Flour (white, wheat or pastry)
- 1 Cup Crushed Macadamia Nuts
- 1 Bag White Chocolate Chips
Preheat oven to 350 degrees. Get 2 large baking pans and line them with Parchment Paper
I used our KitchenAid to Whip/Whisk the Butter & both Sugars Together because I like them REALLY Whipped. You can use a whisk but your shoulder might get sore.
Once they are fully whipped and creamy, add in both Extracts. Then whip in the eggs one at a time. Then add in the Salt and Baking Soda. Whip the heck out of this mixture and then change out your Whip for your Regular Mixer/Beater and lick clean the Whip tool. you won’t regret it. For real, do it.
I like to add in the flour 1/2 a cup at a time. Once all flour has been incorporated and well mixed, taste some dough. Make sure it doesn’t need a bit more sugar for your personal liking. You will probably find though that they are perfect.
Add in your Crushed Macadamia Nuts and mix thoroughly. Then add in your white chocolate chips and Mix some more.
Drop large blobs of dough – really, any size works with these guys. You want small cookies. Fine. Big Cookies. Fine!
Place in the oven for 10 Minutes and take them out when their bottoms are lightly browned. They may seem under done but they will finish cooking outside of the oven and you don’t want them crispy.
I slide the parchment paper onto my counter to cool. They are too good not to eat while warm though so go for it. You deserve the first cookie!
*Instead of White Chocolate Macadamia Nut you can make them almond & Andes mints. Maybe for the holidays get some Pecans and instead of chocolate add in Maple Syrup Sugar in place of both the other sugars or just the white sugar. Have fun with this recipe. Keep the base the same and you won’t go wrong.
Oh, and I usually double cookie recipes because they go super fast in our house. This recipe doubled made about 60 Cookies minus all the dough we ate and the cookies who gave their lives to our bellies before I could take their picture.
